Snack muffins with filling (mini pies)

  1. The dough is very quick to make, so let's start with the filling first. We prepare the necessary set of products. Boil chicken breasts (breast) and rice in advance in salted water.
  2. Onion cut into small cubes.
  3. We twist the meat through a meat grinder.
  4. Pour some sunflower oil into the pan. Once the oil is hot, add the onion. Fry the onion a little.
  5. We send meat to the onion. Mix well. Cover with a lid and simmer for a couple of minutes. Add dried herbs, ground black pepper and rice. Mix well.
  6. If the filling turns out dry, you need to add a little water. We mix.
  7. Salt to taste. We mix. Simmer another 1-2 minutes - and the filling is ready.
  8. Let's take a test.
  9. Pour kefir into a bowl, add eggs, mayonnaise and salt. Mix with a whisk.
  10. Add flour and soda together, sift immediately into a bowl.
  11. Mix thoroughly with a whisk.
  12. The dough is ready!
  13. I use silicone molds. If you use metal, then they must first be lubricated with butter.
  14. Pour a little dough into the mold with a spoon or ladle.
  15. We put the stuffing. My stuffing is moist, but dense enough. I put in a little and press it to the dough.
  16. Add a little more dough on top, distributing evenly in the form. Leave a few millimeters from the edge of the form blank.
  17. Place the molds on a baking sheet.
  18. We send the muffins with chicken and rice to the oven preheated to 170 degrees for 30-40 minutes. The baking time depends on the oven itself and on the volume of your forms. My forms are quite small, in the end I got 18 pieces. The top of the muffins should be lightly browned.
  19. Chicken and rice muffins are ready! Bon appetit!
