A hearty omelet with sorrel, fried onions and fresh herbs is a great breakfast or snack. Cooking in butter gives the omelette with milk extra juiciness and tenderness, and the addition of blanched sorrel gives it an appetizing taste with a sour aftertaste. Try it!

  1. Prepare the ingredients according to the list. Sort sorrel, parsley and dill, rinse and dry.
  2. Boil 0.5 liters of water in a saucepan or saucepan, add 1 pinch of salt. Place the sorrel leaves in boiling water and simmer for 2 minutes over medium heat. Then fold the sorrel onto a sieve to drain excess liquid.
  3. Peel the onions and chop finely.
  4. Cut the sorrel leaves into thin strips.
  5. Heat vegetable oil in a skillet over medium heat. Place the chopped onions and, stirring occasionally, sauté for about 6 minutes, until soft and golden.
  6. Then add the chopped sorrel to the skillet. Stir and fry for another 1 minute.
  7. While the onions are fried, prepare the omelet mixture. To do this, combine eggs, milk, 1 pinch of salt and black pepper in a bowl.
  8. Finely chop the dill and parsley. Save 1-2 pinches of herbs for garnish if desired.
  9. Add chopped greens and sauteed sorrel to the egg and milk mixture.
  10. Stir everything thoroughly until the omelet mixture is smooth.
  11. In another skillet, melt the butter over medium heat. Using a brush, spread the oil in a thin layer over the bottom and rim of the pan. For this cooking step, it is best to use a non-stick skillet.
  12. Pour the prepared omelet mixture into a preheated and greased frying pan.
  13. Reduce heat slightly, cover skillet with lid and cook omelet for 5-7 minutes, until omelet mixture is completely set and lightly browned around the edges.
  14. The sorrel omelet is ready.
  15. Transfer the omelet to a plate. Sprinkle the remaining herbs over the dish. If desired, top up the dish with lettuce leaves and serve.
