Matzo dumplings (balls) soup is a traditional Jewish dish prepared for the Jewish Passover (Passover). The main ingredients of the dumplings are matzo flour, eggs, chicken fat and spices. Seltzer water makes them softer and lighter when cooked. The dough forms perfectly round balls that are boiled in water for over an hour until tender, then served in a rich homemade chicken broth. Sprinkle the soup with chopped fresh dill and enjoy the wonderful spicy taste and aroma

  1. Heat the chicken fat in a small skillet over medium-high heat. Add chives and cook for 30 seconds. Set aside to cool slightly. In a large bowl, combine eggs, dill, seltzer water, sugar, salt and black pepper until smooth. Add the matzo flour and chicken fat and green onion mixture and stir. Cover tightly and refrigerate for at least 8 hours and up to 24 hours so that the flavors are distributed and the mixture is easy to work with.
  2. Matzo balls: In a large saucepan over medium heat, bring salted water to a boil. Form the dough into 8 equal-sized balls, about 50 g each. each, add them to the water, reduce heat, cover and simmer until the balls are very soft, about 1 hour 20 minutes. Before serving with a slotted spoon, transfer the balls to a pot of chicken stock and cook for 5 minutes. Pour the soup into bowls and serve.
  3. Chicken broth: Mix all the ingredients in a large saucepan and add enough cold water to cover the bones 5 cm above. Bring to a simmer over medium heat, then reduce heat to low and simmer, skimming broth, every 15 minutes, for 3 hours. Strain the broth into a large bowl and discard the bones. Transfer the broth to a large saucepan and cook until half evaporated. Add the baked jalapenos and simmer for another 10 minutes, then remove the pepper. Season with salt and pepper and sprinkle with fresh dill.
