Spicy biscuit roll with cream cheese cream

Bake an interesting dessert pastry for tea or coffee - a spicy roll with a layer of cheese cream. A bright and non-trivial combination of tastes and aromas can cause admiration.

  1. Prepare the ingredients.
  2. Butter and cream cheese for cream should be at room temperature - you need to get them out of the refrigerator in advance.
  3. Line a baking sheet with parchment paper, grease it with butter and sprinkle with flour.
  4. Turn on the oven to preheat to 175 degrees.
  5. In a bowl, mix flour, baking powder, cinnamon, ginger, pepper, allspice, vanilla and a pinch of salt. Set aside.
  6. Separate the yolks from the whites.
  7. Melt butter. Cool down a bit.
  8. Add sugar to the yolks (leave 1 tablespoon of sugar to add to the protein mass).
  9. Beat the yolks with sugar with a mixer until whitening (5 minutes).
  10. Add melted butter. Mix.
  11. Sift the flour and spice mixture to the yolks.
  12. Mix the dough with a spatula.
  13. Add the remaining pinch of salt to the egg whites and beat until frothy, 1 minute.
  14. Pour the tablespoon of sugar left for proteins.
  15. Beat the whites for another 3-4 minutes, until soft peaks. Add a third of the whites to the dough and mix.
  16. Add remaining proteins. Mix the dough again.
  17. Put the dough on a baking sheet lined with parchment. Smooth the surface and send to the preheated oven.
  18. Bake a biscuit for 12-14 minutes at a temperature of 175 degrees.
  19. Remove the cake on parchment from the baking sheet. Sprinkle with powdered sugar. Cover the cake with a clean kitchen towel and invert onto the table with the towel.
  20. Remove paper from biscuit. Then roll it together with a towel into a tight roll. Cool for about an hour.
  21. Beat butter and cream cheese until smooth, 1-2 minutes.
  22. Add powdered sugar, vanilla, lemon juice and salt.
  23. Beat until thick white mass, 4-5 minutes.
  24. Unroll the roll and spread the cream evenly (leave 1 tablespoon of cream to decorate the roll).
  25. Roll up the roll. Trim the edges.
  26. Lay the roll seam side down on a plate.
  27. Dip each marmalade in the cream left for decoration and put on a roll (I placed it along the middle). Sprinkle the top of the roll with powdered sugar using a strainer.
