Spiced pumpkin cake is something more than ordinary baking, it is already an art. The bright, fluffy pumpkin base and the richness of the filling create a cake that is unique in appearance and taste, just the perfect cupcake.   1. We prepare products for the preparation of pumpkin cake.
  2. Turn on the oven to heat up to 180 degrees.
  3. First of all, let's prepare pumpkin puree.
  4. We clean the pumpkin, cut into arbitrary cubes. We put the pumpkin on a baking sheet and send it to the oven for 25 minutes at 180 degrees.
  5. Sift flour into a large bowl, add baking powder, soda, salt, cinnamon, nutmeg and ginger.
  6. Mix dry ingredients thoroughly.
  7. Beat soft butter with two types of sugar (5-7 minutes).
  8. Continue beating while adding the eggs (one at a time). Whisk for 5-7 minutes.
  9. Puree the baked pumpkin with a blender. From 400 grams of fresh pumpkin, I got 220 grams of puree.
  10. Let the pumpkin puree cool down.
  11. While the puree is cooling, grind the nuts in a blender.
  12. Wash the apple, peel it, remove the core, finely chop.
  13. Transfer the butter-egg mixture to a convenient deep bowl. In this mixture, we introduce pumpkin puree in parts, mixing at the minimum speed of the mixer.
  14. Add apple, mix.
  15. Whisking constantly, add the flour mixture in small portions to the bowl with the liquid dough base.
  16. The dough will be quite thick.
  17. Add nuts and cranberries to the dough. We mix.
  18. Put the dough into a mold. Bake the pumpkin cake in the oven, preheated to 175 degrees, for 60 minutes. Check the readiness of the cake with a skewer.
  19. Let the finished cake cool down a bit.
  20. Then take the cake out of the mold and let it cool completely on a wire rack.
  21. Decorate pumpkin cake as desired: sprinkle with powdered sugar or pour over glaze. To prepare the glaze for 12 tbsp. spoons of powdered sugar take 4 tbsp. spoons of water. We heat over low heat and, stirring constantly, bring the mass to a homogeneous state. Remove glaze from fire.
  22. When the icing begins to turn white, pour it over the cake. Decorate the top of the pumpkin muffin with lemon zest and chopped nuts.
