Mexican style spicy scrambled eggs recipe. Scrambled eggs are cooked with tomatoes, garlic and dried spices, including red pepper, which add an interesting spice. Such a delicious and completely uncomplicated breakfast made from simple products will cheer you up even on the gloomiest morning.

  2. If desired, the amount of red hot ground pepper can be varied or even replaced with chili pepper - then the scrambled eggs will acquire a truly Mexican flavor. However, be careful that the already spicy and spicy dish does not become too fiery and "flammable".
  3. Melt the butter in a frying pan.
  4. Peel the onions, cut them into small cubes and put them in a frying pan with butter.
  5. Fry the onions over medium heat for about 3-4 minutes, until light golden brown.
  6. We make a cruciform incision on the tomatoes. Dip the tomatoes in boiling water for 1 minute, then transfer them to cold water and peel them. Cut the tomatoes into large slices.
  7. Peel and chop the garlic with a knife.
  8. Add garlic, tomato paste, ground paprika, ground coriander, red ground pepper, salt and sugar to a bowl of tomatoes.
  9. We mix.
  10. Put tomatoes with spices in a pan with onions, reduce heat to a minimum and fry, stirring occasionally, for about 8-10 minutes.
  11. During this time, the excess liquid (juice) will evaporate, and the tomatoes will become very soft, mushy.
  12. In the vegetable mass, make two "holes" with a spatula.
  13. We drive eggs into the "holes".
  14. Cover the pan with a lid and cook scrambled eggs with tomatoes for about 2 minutes, until the protein set and the desired readiness of the yolk (I have liquid yolks inside).
  15. Rub the cheese on a coarse grater.
  16. Sprinkle the fried eggs with tomatoes with grated cheese.
  17. Cover the pan with a lid and wait about a minute for the cheese to melt.
  18. Finely chop the parsley.
  19. Sprinkle spicy scrambled eggs with tomatoes and cheese with chopped parsley and serve hot.
