Stewed potatoes with eggs and herbs

Delicious and budget food - stewed potatoes with eggs. Potatoes, eggs, onions and some dill are all you need for this simple and hearty dish. It is not difficult to prepare it - potatoes, stewed in a pan along with fried onions, are poured with eggs, sprinkled with fragrant fresh dill and simmer a little until fully cooked. An excellent side dish or a completely independent dish!

  1. Peel the onion and cut into small cubes.
  2. Melt the butter in a frying pan over low heat. We spread the onion and, stirring occasionally, fry for about 7 minutes, until soft and light golden brown.
  3. Peel the potatoes, rinse and cut into medium pieces. Put the potatoes in a skillet with onions.
  4. In any convenient way, bring about 200 ml of water to a boil.
  5. Pour boiling water over the potatoes.
  6. Add salt (1/4 teaspoon).
  7. Cover the pan with a lid and simmer the potatoes over low heat for about 15 minutes, until tender. If there is still liquid in the pan, open the lid, increase the heat and, stirring, cook the potatoes for another 3-4 minutes, until the liquid has completely evaporated.
  8. While the potatoes are cooking, break the eggs into a bowl, add the remaining salt (1/4 teaspoon).
  9. Mix with a fork.
  10. We wash the dill, dry it and chop it finely with a knife.
  11. Fill the potatoes with the egg mass.
  12. Sprinkle with dill.
  13. Cover the pan with a lid and cook the potatoes and eggs over low heat for about 3-5 minutes, until the egg mass sets.
  14. Stewed potatoes with eggs and herbs are ready. We lay it out on plates and serve it to the table.
