Boil the water. Add rice, let it boil again, reduce heat and cook for 15 minutes, until rice is tender.
Chop the onion and garlic finely. Remove the skin from the tomatoes and finely chop them. Peel the courgettes and cut into cubes. Grate the carrots on a fine grater.
Drain the rice, rinse it under cold water and let dry in a colander.
Heat the olive oil in a frying pan, send the onions, garlic and carrots to simmer for 2 minutes, then add the tomatoes and cook for another 5 minutes. Then send the zucchini to the same pan, add spices, salt and pepper to taste, cover and cook, stirring occasionally, for 35 minutes.
Add rice, stir. Can be served on the table.
