  1. To make a delicious homemade cake, we need the following ingredients: wheat flour, fresh strawberries, refined sunflower oil, milk, granulated sugar and vanilla sugar, chicken eggs, baking powder and a pinch of salt. All foods should be at room temperature.
  2. My dense, elastic berries. To do this, we collect cold water in a large container, put strawberries in it and let it swim a little - this way the sand will sink to the bottom. Gently mix the strawberries with your hands, then remove and transfer to a colander. It is important not to remove the stalks until the berries are clean. Otherwise, the strawberries will absorb a lot of water and become limp.
  3. Remove the stalks and place the clean berries on paper towels or napkins to remove excess moisture. In total, we need 250 grams of strawberries for the cake (the weight is indicated in the already prepared form). Yes, do not forget to turn on the oven to warm up 180 degrees.
  4. In a separate bowl, combine 270 grams of wheat flour (w.c.), 2 teaspoons of baking powder and a pinch of fine salt.
  5. We mix everything and sift through a sieve to loosen the dry mixture and additionally get rid of possible debris.
  6. Break 3 chicken eggs into a bulky dish, pour 170 grams of granulated sugar and 1 teaspoon of vanilla sugar (you can replace it with a pinch of vanillin or not add at all if you don't want to).
  7. Beat eggs with sugar using a mixer until a fluffy and relatively stable mass - at maximum power for 10-15 minutes. Then, without stopping whipping, pour in 100 milliliters of vegetable oil in a thin stream. Beat for another minute.
  8. Pour in 100 ml of milk and mix it into the base.
  9. It remains to add the dry flour mixture from step 5 and stir in quickly.
  10. You can use a mixer, but better with a spatula. Cupcake dough does not like long-term exposure - as soon as there are no dry areas and lumps left, we stop stirring. The consistency of the dough turns out to be quite moist, even fluid, but at the same time not liquid.
  11. It remains to collect the future strawberry cupcake. We take a shape suitable in size (not necessarily round with a hole like mine), grease it with vegetable or butter (in the second case, be sure to sprinkle it with flour so that the dough does not stick). We begin to spread the dough into the mold in several steps.
  12. We alternate dough and berries. Of course, you can immediately mix the strawberries into the dough, but I don't like that - the berries can give juice and the dough, before it starts baking, will already be colored.
  13. So we fill the entire form with dough and strawberries, leveling everything with a spoon or spatula.
  14. We bake the strawberry muffin in a preheated oven at 180 degrees on an average level for about 1 hour. I have a gas oven, bottom heating, no convection. You focus on the characteristics of your assistant. We check the readiness not only visually (the top of the cake will become a pleasant golden hue), but also on a dry torch. To do this, take a wooden skewer or toothpick and stick it into the highest place near the cake. If the stick comes out dry, the strawberry muffin is ready.
  15. Let the finished baked goods rest in the form for 5 minutes, after which you can take out the cake. Sprinkle the top with powdered sugar if desired.
