Stuffed eggplant with meat and rice

  1. Cook rice until half cooked, fry the onion, mix rice and onion with minced meat, salt and pepper.
  2. Cut the eggplant into circles, remove the core and put the prepared minced meat in the holes formed. Place the stuffed eggplant in a baking dish. Put a tomato circle on top of each eggplant.
  3. Salt a little sour cream and add finely chopped garlic, you can add herbs. Pour the eggplant with the resulting sauce and put in the oven over medium heat, bake until tender.
