We once tasted these little jellies with sour cream in Tallinn. It seems to be the same set: cucumbers, onions, herring ... And how cleverly served!

Ingredients

  1. Soak gelatin in 1/2 glass of cold water for 20-25 minutes.
  2. Cut the onion into small cubes, place in an ovenproof bowl, drizzle with vinegar and cover with boiling water. After 1 min. discard in a colander and pour over with cold water. Dry.
  3. Cut the cucumbers in half lengthwise, if the seeds are large, remove them with a sharp spoon. Cut the pulp into small cubes. Season with salt and leave to stand for 10-15 minutes.
  4. Cut the herring into cubes the same size as the cucumbers. Throw the cucumbers on a sieve, add the juice released from them to the sour cream, stir. Heat gelatin together with water in a saucepan almost to a boil so that it completely dissolves; pour into sour cream, mix very thoroughly.
  5. Add onions, cucumbers, herring, dill and pepper to the sour cream. Stir and place in glasses or silicone muffin tins. Place in the refrigerator for 4-6 hours. Serve cold - either directly in glasses, or by taking out of the molds upside down.
