  7. Combine the protein and yolk masses, mixing the dough with the usual movements. But remember that you do not need to do this for a long time so that the airy dough does not fall off.
  8. Spread the biscuit dough with a teaspoon on a baking sheet covered with parchment, at a distance of 3-4 cm from each other. Bake in the oven at a moderate temperature (150-160 degrees) for about 15 minutes.
  9. While the biscuit blanks are cooling, proceed to the preparation of the cream.
  10. While whipping sour cream, pour in the condensed milk in a thin stream. If the cream is watery, you can add a thickener.
  11. Finely chop the prunes and add them to the cream. Stir.
  12. Start collecting the cake. To do this, cover a large bowl with cling film. Dip the semi-finished biscuits in the cream and put them in a bowl, smearing the cream even thickly on top.
  13. Leave the cake in the bowl for several hours in the cold, let it soak.
  14. Then carefully invert the contents of the bowl onto a serving platter. Remove the film from the cake.
  15. Garnish with melted chocolate and ground nuts. If you want to make the image of a turtle, then attach the paws and head from pre-set aside biscuits. Paint the shell with caramel, icing or buttercream.
