Amazing, tasty and fragrant carrot cake consists of juicy spicy cakes and delicate curd cream. It is complemented by a lemon note and nuts. This cake will become your favorite.

  1. We combine eggs, regular and vanilla sugar, vegetable oil. Mix by hand or with a mixer.
  2. Add flour, soda, salt, spices and baking powder.
  3. We mix.
  4. Add grated carrots, chopped walnuts and lemon zest. We mix.
  5. Pour 1/3 of the dough into a 20 cm diameter mold, the bottom of which is covered with parchment or foil.
  6. We bake the cake for 30 minutes at a temperature of 170 degrees. Take out of the oven and let cool completely. Thus, we bake 2 more cakes.
  7. We trim the surface of the cooled cakes with a knife, cutting off the convex part.
  8. To prepare the cream, combine cottage cheese, sour cream, powdered sugar, soft butter and lemon juice.
  9. Using an immersion blender, we obtain a homogeneous mass. The resulting cream is sent for 30 minutes in the refrigerator so that it keeps its shape well.
  10. Let's start assembling the cake. We smear the cakes with the cooled cream. We coat with cream and well align the sides and top of the cake. We send the cake in the refrigerator for at least 3 hours, you can leave it overnight.
  11. We decorate the cake as desired: chocolate, nuts, fruit or meringues on a stick.
