From the indicated amount of ingredients, I got 6 cupcakes.
It is best to immediately turn on the oven to warm up to a temperature of 180 degrees.
Sift the flour into a deep bowl.
Add semolina, vanilla, baking powder and sugar.
Stir.
Squeeze the juice from the orange and remove the zest with a fine grater. I had a large orange (300 g), so I managed to extract the right amount of juice (140 ml) from just over half of the fruit.
In a separate deep bowl, combine orange juice, vinegar and vegetable oil. Mix properly.
Pour orange mixture into bowl with dry ingredients.
Knead a homogeneous dough.
The consistency of the dough should be a little thicker than for pancakes and fall off a spatula or spoon in a "lump".
Divide batter into cupcake or muffin tins.
Bake Lean Orange Cupcakes in an oven preheated to 180 degrees for about 30-35 minutes.
Cool the finished orange muffins slightly, remove from the molds and serve.
