Tasty Lean orange muffins

Soft, fragrant and very tasty orange cupcakes are a great addition to coffee or tea.

  1. Prepare the items on the list.
  2. From the indicated amount of ingredients, I got 6 cupcakes.
  3. It is best to immediately turn on the oven to warm up to a temperature of 180 degrees.
  4. Sift the flour into a deep bowl.
  5. Add semolina, vanilla, baking powder and sugar.
  6. Stir.
  7. Squeeze the juice from the orange and remove the zest with a fine grater. I had a large orange (300 g), so I managed to extract the right amount of juice (140 ml) from just over half of the fruit.
  8. In a separate deep bowl, combine orange juice, vinegar and vegetable oil. Mix properly.
  9. Pour orange mixture into bowl with dry ingredients.
  10. Knead a homogeneous dough.
  11. The consistency of the dough should be a little thicker than for pancakes and fall off a spatula or spoon in a "lump".
  12. Divide batter into cupcake or muffin tins.
  13. Bake Lean Orange Cupcakes in an oven preheated to 180 degrees for about 30-35 minutes.
  14. Cool the finished orange muffins slightly, remove from the molds and serve.
  15. These lean muffins are a great addition to a cup of tea or coffee!
