Tasty Snack muffins with egg and bacon

Bright and mouth-watering snack muffins on kefir are perfect for home gatherings. These muffins contain only the most delicious: crispy bacon, salty cheese, egg and fragrant green onions.

  1. For the filling, hard boil the quail eggs (about five minutes) and peel them.
  2. Cut the bacon into strips, so it will be more convenient and faster to fry it.
  3. Fry the bacon in a dry frying pan.
  4. Place bacon on paper towel to absorb excess oil.
  5. Grate the cheese on a coarse grater.
  6. Rinse green onions, dry well and chop finely.
  7. For the dough, combine kefir, vegetable oil, sour cream and a chicken egg in a large bowl. Mix until smooth.
  8. Sift flour and mix with salt and baking powder. Gradually add flour mixture to liquid ingredients and stir until combined.
  9. Finally, gently fold in the bacon, cheese, and green onions. Save some bacon and onions for garnishing muffin snacks.
  10. Preheat oven to 180 degrees. Prepare muffin tins: grease them with vegetable oil or put paper capsules for baking. Fill the prepared forms with dough by about a third. Place one quail egg in the center of each mold.
  11. Cover the eggs with the remaining dough, filling the molds almost to the brim.
  12. Place bacon on top for garnish.
  13. Bake unsweetened cupcakes on kefir in a preheated oven at 180 degrees for 25-30 minutes (always be guided by your oven). Readiness of cupcakes to check with a match or a wooden skewer.
  14. Ready-made snack muffins with egg, bacon, cheese and green onions cool and can be served garnished with chopped green onions.
