Thai Fried Rice with Peanut Butter

Ingredients

  1. Pre-boil the rice, peel and seed the tomato, chop the garlic, cut the oyster mushrooms into medium strips.
  2. Heat a skillet over high heat and fry the garlic in peanut butter for 20 seconds. Add mushrooms, stir, after 1 minute add boiled rice and stir fry for 2 minutes. Add finely chopped onion and tomato, 1 tablespoon of fish and 1 teaspoon of soy sauce.
  3. Cook, stirring occasionally, for another 1 minute.
  4. Arrange on plates, sprinkle with cilantro. Serve with lime wedges.
