Thai fried rice with shrimp and pineapple

Thai fried rice with shrimp and pineapple

Ingredients

  1. Boil the rice in boiling water until tender. Drain and rinse under cold water.
  2. Heat oil in a wok over medium heat.
  3. Add finely chopped shallots, finely chopped garlic, finely chopped chili and bell peppers and fry until aromatic for about a minute.
  4. Add a lightly beaten egg and fry for another minute.
  5. Add broth, fish sauce, curry and sugar. Cook for a minute.
  6. Add nuts and cook for 30 seconds.
  7. Then add the rice, break up the lumps, and cook for a few minutes.
  8. Add pineapple, shrimp, peas and cinnamon, cut into small pieces. Mix well.
  9. Remove from heat and serve, sprinkle with chopped green onions and cilantro.
