Agree, there is nothing tastier than a combination of meat, vegetables and cheese. And if you add a cake to this ... the departure from ketosis is assured. But if you make keto tortillas, then you can make amazing keto quesadillas.

Ingredients

Directions

  1. Let's start with the filling. Fry the chicken separately, add salt, pepper, garlic and paprika to it. In a separate frying pan, fry the onion and bell pepper (strips), cut into thin half rings, until tender. Add the cooked vegetable mixture to the cooked chicken, stir and leave under the lid while making the tortillas
  2. For tortillas, beat eggs with salt, add flour and baking powder (or slaked soda), beat well so that there are no lumps
  3. Melt the butter (it should be warm, not hot) and add to the mixture
  4. Add a little warm water to the resulting dough and you can start baking
  5. Preheat a skillet, brush with oil and bake the tortillas over medium heat, covered. For about 1 minute on each side, turn the cake over as soon as it grabs, do not keep them on fire for a long time, because you will need to fry them again, already with the filling
  6. When you're done, grate the cheese
  7. Put one flatbread into a preheated and greased frying pan in which the flatbreads were fried, then a little filling and sprinkle with cheese, cover with a flatbread and a lid on top. Fry over medium heat, the main thing here is that the cheese melts and the bottom cake is slightly fried. It usually takes less than a minute.
  8. In order to turn the quesadilla on the other side and fry the top tortilla, it is better to use a plate. First, take a spatula and make sure that the quesadilla is not stuck underneath, then cover the pan with a plate and turn it over (pan), the quesadilla should be on your plate. Gently transfer (a spatula to help you) the unroasted side of the quesadia into the pan, close the lid and let it sit for a minute to become perfect.
  9. Serve the quesadilla with the sauce. We usually only use sour cream, but sometimes we also add a sauce made from chopped tomatoes, finely chopped onions and spices. It goes well with sour cream and perfectly complements the taste of quesadilla.
