Tomato salad with fried sweet peppers and eggs

Salad of juicy tomatoes with fried bell peppers is an appetizer with an absolutely harmonious taste, which is achieved thanks to the original dressing of two types of vegetable oil with the addition of boiled eggs, mustard and fresh herbs. And besides, the salad looks very bright and appetizing.

  1. We prepare all the necessary products.
  2. Optionally, only olive oil can be used for dressing.
  3. Boil the eggs hard boiled (10 minutes after boiling water) and cool in cold water.
  4. We clean the sweet pepper from seeds and cut into strips.
  5. Pour 10 ml of olive oil into the pan and fry the sweet pepper over medium heat for about 5-7 minutes, stirring occasionally. Salt during frying.
  6. Cut tomatoes into small slices.
  7. Arrange the tomatoes on a serving plate. Place the roasted peppers on top.
  8. Finely chop the parsley.
  9. Preparing salad dressing. To do this, in a convenient bowl, combine olive and sesame oil, mustard, chopped parsley and salt. We mix.
  10. Peel the cooled eggs and chop finely.
  11. Add eggs to the mixture and mix.
  12. Spread the resulting dressing with boiled eggs and herbs evenly on top of the vegetables.
  13. Serve a salad of tomatoes with fried bell peppers and eggs to the table.
