Potato tortilla - is probably the most famous recipe in Spanish cuisine and its symbol. Although this dish is very simple and unpretentious, or rather - it is an omelet with potatoes and onions, you will remember its characteristic and exceptional taste.   1. The longest and most delicate process is that we need to caramelize the onion.
  2. Cut the onion into slices or straws and cook in a pan with a thick bottom on the lowest possible heat, stirring occasionally. Onions should change color very gradually and caramelize in their own sugar.
  3. While the onion is cooking, cut the peeled potatoes into thin slices of equal thickness and size. Put on the fire a frying pan with a large amount of oil.
  4. Without waiting for the oil to heat up, add the potatoes and cook, stirring. After 10 minutes, you can increase the heat a little too brown some of the potatoes, but do not do it right away. Finally, the potatoes should be fully cooked, but not burnt or fried until crispy.
  5. Remove the potatoes, let the oil drain well and place in a deep bowl, add the prepared onions and well-beaten eggs. Mix everything thoroughly, salt and pepper.
  6. Pour the mixture into a pan with a couple of tablespoons of olive oil and cook for 3-4 minutes on each side.
  7. You need to turn the "cake" carefully to preserve its integrity. If there are two pans of the same size, you can simply cover the pan on which the tortilla is prepared with another (preheated) and so turn over. Serve immediately.
