  1. For trout, remove the gills and entrails. Clean and dry the carcass with paper towels.
  2. Squeeze the juice out of one lemon, cut the second into circles. Place a few slices of lemon and sprigs of herbs in the belly of each fish. Season the fish with salt and pepper. Drizzle with lemon juice and drizzle with olive oil. Wrap in foil.
  3. Bake small fish over hot coals for 15 minutes, large fish for 25 minutes. Remove from heat, unfold gently.
