  1. Cut the chocolate and fold it into the pan.
  2. Add cream and place in a water bath. The water should be hot but not boiling.
  3. Stir the mixture with a whisk until smooth.
  4. Note: if desired, you can add 2 glasses of rum at this stage.
  5. Remove the pan from the bath, and continue to beat vigorously until the cream remains on the crown if you lift it.
  6. Then put the cream in the refrigerator for about 20 minutes.
  7. Before forming the truffles, sprinkle a board, tray, or another work surface with cocoa. Use two teaspoons to form balls of cream.
  8. Tip: To make the shape of the truffles rounder, shape the balls with your fingertips, pre-sprinkled with cocoa. And to prevent softening of the chocolate cream, you must first soak your hands in cold water and then dry them well.
  9. When you have formed the truffles, sprinkle them with cocoa again, preferably through a sieve, and put them in the fridge for 2 hours.
