Cut the zucchini into slices, then into cubes. Cut the mushrooms into cubes.
Heat olive oil in a frying pan. Fry mushrooms and zucchini over medium heat until golden brown.
Wash the tomatoes, cut into cubes or wedges, add to vegetables and fry, stirring occasionally, for another 5-10 minutes.
Beat eggs lightly. Add salt and pepper and stir.
Spread vegetables and mushrooms evenly in the pan. Pour the beaten eggs over, turn the fire on, cover the pan and cook the vegetable omelet with mushrooms for another 5-10 minutes (until the egg thickens).
Chop or tear the greens. Sprinkle over the finished omelet.
