This pizza is easy to prepare and does not take much time. Even while fasting, you can indulge yourself in a tasty treat.

  1. Add flour, yeast, salt to a large bowl and mix with a fork. Add water and olive oil. Mix everything and put in a warm place for 1 hour. You can, for example, put in a container of warm water and cover with a towel.
  2. Fry eggplants and zucchini
  3. While the dough is rising, cut the eggplant into circles, no more than 5 mm thick. Place in a deep plate, sprinkle with coarse salt and press on top with a plate with weighting agent for 30 minutes. This will remove the bitterness from the eggplant. Cut the courgettes into slices, and the pepper into thin strips.
  4. After 30 minutes, rinse the eggplants from salt and place in a preheated grill pan greased with olive oil. Fry for 5 minutes on each side. Also fry the zucchini. If you don't have a grill pan, you can fry it on a regular one.
  5. Put vegetables and mushrooms on the dough
  6. Take out the dough, roll it out and place on a baking sheet or a special pizza dish. Grease the base of the pizza with tomato paste, arrange the vegetables in any order. Add mushrooms.
