Vinaigrette with pickled mushrooms is one of the many variants of vinaigrette. Pickled honey mushrooms replace cucumbers and peas, and even sauerkraut. If desired, add one of the excluded ingredients of the classic vinaigrette.

  1. Wash potatoes and beets and boil until tender. Allow to cool, peel and cut into cubes. Peel and chop the onion.
  2. Throw the mushrooms in a colander and rinse from the brine.
  3. In a small bowl, mix vegetable oil with vinegar, salt and pepper. Stir in beets, potatoes, onions and mushrooms. Season with sauce.
