Whole wheat rye bread with carrots and seeds

The dough for this bread is mixed with two types of flour - whole wheat and rye flour. And also grated carrots and sunflower and pumpkin seeds are mixed into the dough. This simple and healthy homemade bread is much more appetizing than regular store bread.

  1. Prepare all ingredients.
  2. The number and types of grains mixed into the dough can be changed to your liking. Flaxseeds, sesame seeds, poppy seeds, oatmeal, and other grains are great.
  3. Pour the seeds into a dry frying pan and dry over medium heat for 3-4 minutes, stirring constantly. They should be dry and crunchy when bitten.
  4. Peel and grate the carrots.
  5. For dough, slightly heat the water (no higher than 40 degrees) and pour into a wide bowl.
  6. Add sugar and yeast. Stir and let sit for 10 minutes.
  7. When foam appears on the dough, add salt, vegetable oil, fried seeds and prepared carrots to a bowl.
  8. Add rye flour and some whole wheat flour. Whisk and then knead the dough with your hands.
  9. When the dough becomes difficult to knead in a bowl, transfer it to the table and continue kneading, adding flour as needed. You may need it a little more than indicated.
  10. The finished dough sticks slightly to your hands and keeps the shape of a ball well.
  11. Place the dough in a bowl, cover with plastic wrap and leave warm for 1 hour.
  12. After this time, the dough grew 2-2.5 times.
  13. Shape the dough into a loaf and place on a baking sheet. Leave the bread to proof for 30 minutes.
  14. 15 minutes before the end of the proofing, turn on the oven and preheat to 200 degrees.
  15. The loaf has almost doubled.
  16. If you want to make a nice cut along the loaf, use a very sharp razor blade, otherwise the air bubbles in the dough will burst and it will sink at the cut.
  17. Bake the bread in an oven preheated to 200 degrees for 25 minutes.
  18. Put the finished bread on a wire rack and leave it under a towel until it cools.
