Yeast buns with mashed potatoes

Mashed potatoes are added to the yeast dough for these buns to give the buns their characteristic structure.

  1. Peel the potatoes, cut into cubes and boil in salted water until soft. Drain the potatoes and mash in mashed potatoes.
  2. In a small bowl, combine yeast and sugar, pour 90 g of warm water, set aside for 10 minutes to let the yeast bloom.
  3. In a separate bowl, mix flour and salt, stirring, gradually add flour to water with yeast, add mashed potatoes and olive oil. Add the required amount of water, knead a homogeneous dough. Transfer the dough to a floured surface, knead for 10 minutes, until elastic. Shape the dough into a ball and place in a lightly oiled bowl, cover with a clean towel and place in a warm place for about 1 hour (during this time the dough should double in volume).
  4. Place the matched dough on a floured surface and knead for about 3 minutes. Divide the dough into 8-10 equal parts and form into balls.
  5. Grease a large baking sheet with vegetable oil, put the balls of dough on the baking sheet at a great distance from each other. Cover the blanks with a clean tea towel and place in a warm place to rise for about 50 minutes.
  6. In the meantime, turn on the oven to preheat to 200 degrees. Place the baking sheet with the blanks in a preheated oven, bake the buns for about 30 minutes, until golden brown.
