Yoghurt peach cake

Delicious, light yogurt-peach cake will please with its wonderful taste and appearance

Ingredients

Directions

  1. Cut dried apricots into pieces, pour boiling water over it and add a couple of tablespoons of sugar. Leave to swell for a while.
  2. Soak gelatin in peach compote for 40-60 minutes. Then heat in the microwave until dissolved (do not boil).
  3. Separately beat egg whites and yolks with powdered sugar. Then carefully mix the yolks to the proteins, add starch, flour, mix gently.
  4. Cover the form with baking paper, pour the dough and bake for 20 minutes at a temperature of 160-180 degrees.
  5. After baking, leave the biscuit in the oven ajar to cool. Then cut it into 2 cakes.
  6. While the cakes are baking, prepare the filling. In a blender, mix the curd mass, yogurt, gelatin, sugar. Add dried apricots.
  7. We put the first cake in a detachable form, pour the filling on top and put it in the freezer for literally 5 minutes (to set the jelly).
  8. Then the second cake and the second layer of filling, cool.
  9. Put peaches from the compote on top (and any other fruits that you want))), and pour a thin layer of jelly.
  10. Everything, yogurt-peach cake is ready))
