Yolk omelet with herbs

It would seem that there are fewer ingredients here than in the classic omelet made from egg yolks and whites, but the result will pleasantly surprise you! Making an omelet using only yolks gives it a pleasant texture, juiciness and tenderness, which is deliciously set off by fresh greens!

  1. Crack the eggs and carefully separate the egg yolks from the whites.
  2. We don't need egg whites - they can be used to prepare other dishes.
  3. Rinse the dill, dry and chop finely with a knife. Save a couple of pinches of greens for serving.
  4. Combine egg yolks, milk, chopped dill and salt in a deep bowl.
  5. Stir until smooth.
  6. Heat a frying pan over medium heat, brush with vegetable oil and pour in the egg-milk mixture.
  7. Reduce heat to low and cook the omelet for about 10-12 minutes, until the omelet mixture sets.
  8. Gently fold the finished omelet in half, transfer to a plate and sprinkle with the remaining herbs.
  9. The yolk omelet turns out to be very tender, it is better to shift it from the pan to a plate or gently shift it with a wide spatula.
  10. Bright yolk omelet with herbs is ready.
