Youka with fried potatoes and melted cheese

Youka are envelopes, or triangles, made of pita bread with egg and cheese. Alternatively, youka with milk scrambled eggs and melted cheese. And as an addition to the traditional egg and cheese filling - fried potatoes. Cooking for a few minutes, but it turns out very tasty and satisfying!

  1. Place the processed cheese in the freezer in advance for 10-15 minutes to make it harder. Then cut the cheese into small cubes.
  2. To prepare 1 portion of the dish, you will need 0.5-1 small sheet of fresh thin lavash, the size of which allows you to roll it up in an envelope with the filling.
  3. Combine egg, milk, salt and ground pepper in a separate container. Loosely loosen with a fork until smooth.
  4. Peel, wash and cut the potatoes into semicircles approximately 3-5 mm thick.
  5. Heat vegetable oil in a skillet over medium heat. Place the potatoes in a skillet and fry for about 3-4 minutes on each side, until golden brown.
  6. Transfer the fried potatoes to a plate.
  7. Reduce heat to low and melt the butter in a skillet. Place the pita bread in the pan so that there is a depression for the filling, and the edges hang loosely.
  8. Place the fried potato slices in the resulting indentation in the pita bread. Spread the processed cheese on top of the potatoes. Season with salt and pepper.
  9. Pour in the egg and milk mixture gently.
  10. Fold the free edges of the pita bread on top of each other with an envelope, closing the filling. Fry pita bread over low heat for about 5-6 minutes. You can cover the pan with a lid.
  11. When the egg mass has set and the pita bread is browned, gently turn the yoku over with a spatula. Cover and cook for about 4-5 minutes more, until golden brown.
  12. Youka with fried potatoes and melted cheese is ready. If desired, cut the dish into 2-4 pieces, sprinkle with a pinch of chopped herbs and serve.
