An original and very tasty dish - a juicy, hearty and nutritious omelet roll with zucchini. Delicate zucchini omelet is just perfect complements the grated cheese filling. An interesting and, at the same time, quite uncomplicated way of cooking makes the usual omelet with zucchini very unusual - such a roll of many thin layers will definitely arouse your appetite!   1. Prepare foods according to the list.
  2. It is best to choose young zucchini, with a thin skin and soft small seeds - this way the omelet will turn out to be surprisingly juicy and tender.
  3. Wash the zucchini, dry and cut off the ends. Grate the zucchini on the finest grater, sprinkle with salt and leave for 5 minutes.
  4. After the specified time, squeeze the zucchini from the excess juice with your hands. No juice needed. Transfer the grated zucchini to a larger bowl.
  5. Drive eggs into a bowl of zucchini.
  6. Add salt, pepper and paprika.
  7. Mix thoroughly with a fork.
  8. Grate cheese on a fine grater.
  9. Warm up the pan thoroughly and grease with vegetable oil. Pour about a ladle of the courgette-egg mass into the pan. Fry the omelet over medium heat for about 1 minute on each side.
  10. Sprinkle about 1/6 of the grated cheese on the omelette pancake.
  11. Gently roll the omelette into a roll and slide over the edge of the pan. Fill the empty space of the pan again with the zucchini-egg mixture so that it connects to the end of the roll and bakes to it.
  12. Fry for about a minute, until set. Then sprinkle with 1/6 of the grated cheese and roll again.
  13. Do the same with all the egg mixture. You will get 5-6 layers of omelet, which ultimately gives the following result - a voluminous omelet roll. Then reduce heat to low, cover the pan with a lid and cook the roll for about 2-3 minutes more.
  14. Hearty zucchini roll-omelet with cheese is ready. Cool it slightly, cut into portions and serve.
  15. Serve the omelet with toast and a cup of coffee.
