Zucchini pancakes with poached eggs and fried onions

A delicious breakfast can be prepared with zucchini, eggs and red onions.

  1. Heat olive oil in a large skillet, pour onion into skillet, cook, stirring occasionally, until soft, about 5 minutes. Sprinkle sugar on the onion, reduce heat, fry the onion for another 10 minutes, until golden brown. Add salt and pepper to taste.
  2. Pour flour and baking powder into a large bowl. Make a recess in the center. In a separate bowl, lightly beat 1 egg with milk, add this mixture to the flour, mix until smooth. Season the dough with salt and pepper.
  3. Grate the zucchini on a fine grater and mix with the prepared dough.
  4. Heat some sunflower oil in a large skillet, spoon pancakes and fry them until golden brown on both sides. Transfer the pancakes to a paper towel.
  5. Prepare poached eggs in any way you like.
  6. Put 3 pancakes on each serving plate, one poached egg on top and a little fried onion on it. Serve immediately.
