Zucchini snack cake with cottage cheese and cheese filling

This popular snack can be cooked both in a pan and in the oven.

Ingredients

  1. Coarsely grate the zucchini, salt, mix and leave for 10 minutes at room temperature.
  2. After 10 minutes, put the zucchini on a sieve, squeeze out the liquid well.
  3. Turn on the oven to preheat to 200 degrees.
  4. Grate hard cheese on a fine grater.
  5. Peel and grate 1-2 garlic cloves. In a large bowl, combine the zucchini, egg, minced garlic, hard cheese and flour. No need to salt the mixture!
  6. Mix the zucchini dough well.
  7. Grease two springform pans with a diameter of 23 cm with butter and place 1/2 of the dough in each mold. Flatten into one layer about 1 cm high. I only have one such form, so I baked the cakes in turn, which, of course, increased the cooking time.
  8. Bake the cakes in an oven preheated to 200 degrees for about 30 minutes, until the top is beautifully golden. If you want the bottom to be well fried, then leave the cakes for another 10 minutes in the oven with only the bottom heat.
  9. This is how the finished zucchini cake looks like, which you need to transfer to the wire rack immediately after being ready and let it cool completely.
  10. Meanwhile, prepare the filling. 1 clove of garlic, peeled and grated on a fine grater. Grate melted cheese on a fine grater and mix with cottage cheese or feta, sour cream and garlic. Whether to add salt is up to you. I didn't add it because the cheese is quite salty. Mix well with a blender.
  11. Transfer to a separate bowl, cover and refrigerate for now.
  12. Completely cooled cakes are ready for assembly. First, grease one cake with half of the curd mass. Cover with second layer.
  13. Lubricate the second cake generously with the curd mass as well.
  14. On top, I decorated the zucchini cake with chopped herbs and tomato slices.
  15. I did not try to bring this cake to perfection, I took ordinary tomatoes. But you can take cherry, then it will turn out even more beautiful.
