Warming up mushrooms: You have to keep this in mind with mushroom dishes
The well-known myth that mushroom dishes should not be reheated is long outdated. It comes from a time when refrigerators were not in every household. Today, reheating leftover food that contains mushrooms is no longer a problem – as long as you follow a few basic rules.
The reason for the myth is the fact that mushrooms are among the perishable foods. Heat accelerates the decay process, toxic decomposition products can develop. Mushroom dishes should therefore never stand around at room temperature for a long time or be kept warm.
Cold, on the other hand, slows down the process. It is therefore important to cool mushroom dishes quickly after preparation and not to store them in the refrigerator for more than a day. You can put the leftovers in an empty screw-top jar or a reusable lunch box. They will keep in the fridge for a day or two.
When warming up, you should heat the mushroom dish well to at least 70 degrees.
If there are leftovers, you should not reheat them. The mushroom protein is very sensitive and the conversion into toxic decomposition products can lead to nausea and diarrhea after consumption.
You should consume dishes with raw mushrooms immediately and not keep them longer.
