18 million tons of food end up in the bin every year. Including 1.7 million tons of baked goods alone, as the environmental organization, WWF found out in a new study. EAT SMARTER explains what this means for the environment, what happens to the products, and how food waste can be reduced in Germany.

Every year, 18 million tons of food end up in the trash in Germany. This affects not only private households, but also production (ignoring losses in agriculture) and processing, bulk consumers, and trade – a waste of valuable resources! A total of 18 million tons: That means that we throw away about every third of food.

This is not only a major problem from an ethical point of view, but also from an ecological and economic perspective. Because raw materials, energy, and water are required, whether for the production or for the destruction of food.

Of the food thrown away, 1.7 million tons of baked goods end up in the garbage every year in Germany. There is such an enormous amount of food waste in the baked goods sector because consumers expect a large and varied range and the demand for the freshness of the products has increased.

Bakeries try to meet these expectations by offering almost their entire range until shortly before closing time. This oversupply of baked goods means that in some shops about one in five baked goods has to be thrown away.

Far-reaching consequences for the environment

“Food wastage has far-reaching consequences for our environment, because it has a negative impact on land use, eutrophication of water bodies, biodiversity, the production of pollutants, greenhouse gas emissions, etc.”, according to the environmental organization WWF, which conducted the study on food waste in the baked goods sector (1).

A harvest area of ​​398,000 hectares of arable land is required for the baked goods produced and then thrown away, which could also have been cultivated otherwise. To clarify the extent: This is an area that is roughly the size of the Balearic island of Mallorca and the state of Hamburg together.

Furthermore, the overproduction of baked goods results in 2.46 million tons of greenhouse gas emissions, which harm the environment unnecessarily. More conscious use of the available bread and baked goods would therefore make a significant contribution to protecting our resources and the climate and reducing food waste in Germany.

Especially against the background of this year’s drought in Germany, the wastage has to be questioned even more, since it also led to enormous harvest losses in the grain sector. Arable land can no longer be claimed on the scale previously used to “throw in the garbage as bread, pizza or pasta” (1).

At 49 percent, private households are the frontrunners in throwing away baked goods, followed by returns from bakeries (36 percent) and retailers (13 percent). These baked goods that are not eaten are then energetically utilized in biogas plants, destroyed in waste incineration plants, or ended up in the animal feed.

Critical: Excess baked goods become pet food

A large part of the baked goods that are not sold is processed into animal feed. This is particularly critical because the baked goods are usually shredded, including the packaging, in the feed manufacturers’ plants.

Most of the plastic is then removed again, but it can be assumed that this rarely happens without leaving any residue and that there is plastic, especially microplastic, in the animal feed. It is, therefore, possible that the animals have plastic particles in their bodies, which humans also ingest by eating meat.

Clear demand of the WWF

The WWF is in favor of computer systems better calculating the production and sale of baked goods so that excess production can be avoided and returns reduced. In addition, consumers should refrain from expecting a well-stocked counter before the shop closes – actions must be reconsidered and changed here.

Most people know where to put the detergent in the washing machine. But what about the right compartment in the drawer? What is it for? Here you will find the solution to the riddle.

What are the three compartments in the washing machine for?

A common washing machine has a total of three compartments, which are labeled differently depending on the type of washing machine. As a rule, the following symbols apply: main wash (II), fabric softener (III or a flower symbol) and prewash (I).

The compartment on the far left is for the detergent, whether in liquid or powder form. The washing machine draws detergent from this so-called washing-in compartment for each wash cycle. This compartment is usually the largest and can be filled with heavy-duty detergent, color detergent, mild detergent or water softener. The temperature of the washing cycle is not decisive.

Prewash – when to use it

Prewash is an additional washing program used to soak stains and dirt on clothes. You can use it with front-loading and top-loading washing machines as well as tumble dryers. To do this, fill the detergent in the prewash compartment and select the program provided for this, usually “+ Prewash”.

At the end of the washing process, the fibers of the textiles inside the washing machine are loosened by a short spin cycle. This allows the detergent used in the main wash to work better.

A pre-wash is rarely really necessary. However, it can be useful for heavily soiled clothing or textiles with stubborn stains. There are also some garments for which the washing label recommends prewashing. Otherwise, it’s better not to use it unless it’s really necessary. This saves you electricity, water and detergent and the laundry is finished faster. Normally soiled clothing gets clean without pre-treatment and you also protect it and can wear it longer.

Prevent mold – clean washing machine compartments regularly

Incidentally, all compartments, including the washing-in compartment, should be cleaned every two months. After each wash, dirt settles there and detergent residues stick.

You should pay particular attention to this, as the existing water residue can also cause mold to form. For thorough cleaning, take out the entire drawer and clean it with detergent or vinegar. The chambers can simply be made to shine with a cloth and cleaning agent.

For preserving, you simply have to fill finely chopped beetroot, peas and carrots into boiled disposable glasses, pour water over them and add about half a teaspoon of salt. Finally, put the closed disposable jars in a preserving pot, fill it with water and, depending on the food, let it boil for about 10 to 90 minutes.

Alternatively, you could try lactic pickling. This works particularly well with cabbage vegetables, cucumbers, beans and peppers. You simply have to put the raw, finely chopped vegetables in a mason jar and fill it with boiled salted water. Close the jar tightly and leave it at around 20 degrees for 1.5 weeks. Finally, let the glasses rest for about five weeks at cooler temperatures of up to ten degrees. If you cool the pickled vegetables well, they will keep for about three months. You can even freeze ready meals, sauces or soups. It is important that the food has cooled down before you freeze it.

Helpful food storage tips

You can also use regional and seasonal fruit and berries to make jam or compote. If you want to make a compote from pears, apples, cherries and plums, you need about 2 kilograms of fruit, a squeeze of lemon juice, a stick of cinnamon, 1 vanilla bean and sugar to your liking. First you cut and clean the vegetables. Then you put it in a pot and fill it with water so that the fruit is covered. Ripe fruit usually requires little added sugar. Then let everything boil down and fill it into mason jars. When storing it is important that you choose a dark place where the temperature is below 20 degrees.

If you keep potatoes in a dark, cool, dry and frost-free place, they will keep for several weeks and are therefore worth stocking up on. The same goes for apples, root and tuber vegetables. Store apples in a cool but slightly damp place; here they usually last for several months. You can ideally store the root or tuber vegetables longer in a wooden box with slightly damp sand. To create your own supply, it can make sense to grow winter vegetables. These include Brussels sprouts, lamb’s lettuce, green cooling, beetroot and salsify. You can get suitable seeds in organic shops, for example.

In order to be able to store food longer, it is helpful to sort the contents of the refrigerator correctly. To top it off, you should store packaged cheese and already cooked or cooked food in fresh storage boxes. Dairy products such as cream, quark and yoghurt as well as opened products are best stored in the middle. If you have perishables such as sausage, fish or fresh meat in the fridge, you should store them at the bottom. The fridge door is ideal for storing butter, eggs, mustard, olives and opened drinks. In the vegetable drawer you can store lettuce, herbs, mushrooms, leeks, cabbage and root vegetables. You can also store dry supplies such as spices, sugar, salt, flour, rice and oatmeal for a very long time if you keep them dry and tightly closed.

With a well-planned and organized stockpiling, you are well prepared for emergency situations even without hamsters.

Tip 2 – Load the washing machine fully

Many washing machines are now equipped with a sensor that measures the amount of water and doses the amount of water accordingly. If your machine is not one of these high-tech specimens, you should only switch it on with a full load if you want to save electricity with the washing machine. Compared to a half-full machine, you can save 24 euros a year. You also avoid 35 kilograms of CO2.

– 4 to 5 tablespoons of salad mayonnaise
– 6 to 7 gherkins
– 1 red and 1 yellow pepper
– 1 cup of sour cream
– Salt and pepper

Preparation of tuna dip

Open and drain the tuna, then place in a bowl. Then add the salad mayonnaise and the sour cream. Slice the gherkins. Remove the seeds from the two peppers, wash well and pat dry. Cut the peppers into fine cubes and add to the other ingredients along with the gherkins. Mix everything together well. Stir vigorously. If the mass is not creamy enough, then it is advisable to add a little hot water and a little of the cucumber water from the gherkins. This makes the mass even spicier. But not too much, otherwise the mass could become too liquid. Better to pour some more. Then season the whole mixture with salt and pepper. The whole thing can also be provided with corn kernels if necessary. However, the mass then has to be seasoned again.
