Norbert Elias’ career reached a high point when his work “On the Process of Civilization” (1976) was received and recognized. In 1977 he received the Theodor W. “On the process of civilization”: the principles

With his theory, he pursued a claim to universality and interdisciplinarity, since it can be used to establish a connection between historical science, sociology and psychology, but it also has points of contact with political science and literary studies.

Norbert Elias saw a need to think of society not in terms of the individual, but in terms of people in their overall social context. “Civilization” was viewed by Elias fundamentally as a process: he described it as dynamic and changing over time. This change is historically conditioned on the one hand, and sociogenetic and psychogenetic on the other. The first volume of his work deals in detail with the psychogenesis of personality structure. The long-term change in the psychic structure of individuals was described as “psychogenesis”; there is a correspondence between the social type and the personality type. The central question here was how personality adapted to social requirements. The development of the individual could only be examined in its chains of interdependence. Elias divided this development of personality structure into three stages: medieval courtoisie, courtly civilité and modern civilisation. The individual regulates his own desires and drives according to society, so as not to attract negative attention; the norms and values ​​of society are internalized. Elias meant the change from external to internal constraints.

In the second volume, Elias expanded his theory in parallel and went into more detail on sociogenesis. This was also divided into three stages of the process: feudalization, the monopoly of power and the socialization of these monopolies. The object of investigation was not the individual, but the human communities: the aim was to find out more about the long-term changes in the structure of society. Society itself divided Elias into so-called figurations. It is a matter of interdependence, i.e. mutual dependency and dependency between those involved. These connections could arise on an emotional basis (e.g. families) or in other ways, such as an institution (e.g. school). According to Elijah, these figurations followed moral and legal precepts. Over time, they developed a certain momentum of their own, so that they became independent of the wishes of the individual. If society changed, the figurations and their interdependencies also changed at the same time.

Findings based on his theory

According to Elias, the process of civilization is unplanned, but not without rules. It’s more about the dynamics of the interconnected structures mentioned, which then produce the changes. There is no zero point and no end point in the process: for him there was no “not at all civilized” society and no “completely civilized” society. In addition, civilization does not develop in a straight line; it may even be declining.

Elias was looking for general rules explaining how Western society developed from medieval feudal society to the 19th century, against a background of the mutual influence of the individual and society. He observed that affect control was not yet necessary to a great extent in the Middle Ages: there were hardly any long-term consequences of violent behavior. The chains of ties between the companies would also have been rather short, since there was only a limited division of labor. In the period of “courtesy of warriors” (from about the 11th/12th to the 17th/18th century) the chains of action became more complex, the free warrior disappeared as a result of increasing monopolization. Those who wanted to be held in high regard in society now had to adapt and control their own behavior more.

The main findings were that functional differentiation increased, especially in sociogenesis, and that this was accompanied by a lengthening of the interdependence chains. The consequences of misconduct create a compulsion to take a long-term view; otherwise serious social and economic disadvantages must be expected (example: prison). The need for affect control is therefore increasing. Another statement by Elias said that the psychologization and rationalization of society was constantly increasing. Critical voices against the theory of civilization

At the heart of the criticism of Norbert Elias is the “Elias-Duerr controversy”. In his work “The Myth of the Civilization Process”, Hans Peter Duerr extensively criticized Elijah’s principles. For the production of fruit candies, simply add approx. 80 ml of fruit juice, for example, cherry juice, to the candy base from above. The sweets are then already colored red and absorb the cherry aroma well. In order to get a more intensive fruit aroma, you can also add, for example, 3 drops of lemon aroma and approx. 80 ml of juice, for example, orange juice, to the sugar mass, boil it up as usual, and you get citrus fruit candies.

Here half a cup of sugar is used, add:

  • a good handful of fresh sage leaves, alternatively 2 tablespoons of dried sage, finely ground
  • 1 tablespoon of honey, preferably organic
  • 1 tablespoon of freshly squeezed lemon juice
  • optional icing sugar for dusting

Here it is recommended to first prepare the sugar mass, then remove the pan from the heat and then add the other ingredients. Then make the sweets out of it, sprinkle with icing sugar, or roll in flour to take the stickiness out.

In addition to 250 grams of sugar, you need:

  • 100ml of water
  • 2 teaspoons of honey
  • 50 ml cream
  • 1 tablespoon of butter

The sugar, the water, and the honey are then first placed in a stainless steel pot, and the candy base mass is made from this again under high heat and constant stirring. Finally, add the butter and cream to the still-boiling mass. Then the mass has to cool down for approx. 15 minutes, stirring every 2 to 3 minutes to prevent layer formation. Candies can then be formed from the mass. After cooling, which takes 4 to 5 hours, the delicious caramel candies are ready.

Harmful to the body: why replace finished products?

The quick and uncomplicated preparation of finished products has its price. Because the ingredients of industrially produced food lead to health damage if consumed regularly. A study just recently found out how dangerous ready-made meals are.

What makes finished products so unhealthy? It is often the trans fatty acids, salt, sugar or artificial flavors they contain: in the long term, they ensure that the risk of certain diseases such as cancer, cardiovascular problems or obesity increases. Nutrient deficiencies, which are due to the low occurrence of vitamins, are also a common consequence of excessive consumption of finished products. However, it is difficult to verify whether food alone can be responsible for certain health problems. Do it yourself instead of buying it: this is how it works

If you want to replace finished products in the long term, you can also start small. Everyday ingredients such as vegetable broth, pudding powder or ketchup can be quickly produced in your own kitchen. The Federal Center for Nutrition reveals how this works:
Vegetable broth: Chop one kilo of vegetables (e.g. soup greens, carrots, celery, leeks) with herbs (e.g. parsley, thyme, rosemary) using a kitchen utensil. Add about 10g of salt and a tablespoon of vegetable oil per 100g of vegetables. Pour the broth into sterile containers and store in the refrigerator.
Pudding Powder: Mix cornstarch and sugar in a 2:1 ratio. For pudding with half a liter of milk, simply boil 60g of this mixture together with a flavoring ingredient (e.g. vanilla pulp, cocoa, grated chocolate).
Ketchup: Wash and dice 500g tomatoes and remove the stalks. Bring a mixture of 70ml fruit vinegar, a clove, a tablespoon of sugar, two bay leaves, a pinch of salt and a pinch of cinnamon to a boil on the stove. Then dissolve 1 tablespoon of tomato paste in it before adding the diced tomatoes. Simmer for about 45 minutes, remove the clove and bay leaf, puree everything finely. Mix 1 tablespoon of cornstarch with cold water, add to the ketchup and bring to the boil while stirring. Finally, pour into a hot, clean, wide-mouthed container and enjoy.

Conclusion: Replacing finished products is not that difficult

In addition to the advantage that they save a lot of time when cooking, ready-made products also have some downsides: they contain unhealthy additives, leave a large ecological footprint and are not always cheap. The good news: Many of them can be replaced easily and without complications.
