One of the most expensive and best-known types of coffee is the Kopi Luwak from Indonesia. The award and its notoriety stem from its unusual and, for some, disconcerting manufacturing process. The spotted civet is a species of civet that eats coffee cherries in addition to various fruits, worms and insects. Only the pulp of the coffee cherries is processed during digestion.

The coffee beans are then fermented by enzymes and then excreted. Plantation owners collect the beans, wash them and then dry them in the sun. The low production volume and the high demand lead to rising prices and unfortunately also to the fact that more and more animals are kept in small cages and fattened. Unfortunately, the reference to “wild collection” is becoming less and less reliable. The taste of “cat coffee” is described as mild, low in acidity and bitterness and slightly sweet. Depending on the types of coffee that the civet eats, the taste of Kopi Luwak can vary. Recommendations for preparing this coffee are the French press, hand infusion or, like the locals, strong mocha.
