We all love fresh bread and fresh rolls. To keep rolls and bread fresh for longer, all you have to do is follow our tips on how to store them properly. The effect is simple and amazing: You can still eat your rolls, bread or other baked goods almost fresh a few days later.
We show you ways to properly store rolls that are left over from breakfast. For example, you can freeze bread and rolls just like other foods. You can store buns in a cloth bread sack, keep them fresh in an earthenware container, and more.
How long does bread keep?
Bread or rolls must be stored in the dark in order to be able to store them properly. To prevent your bread or rolls from going moldy, place them on the cut edge and preferably in an earthenware container. In addition, your bread will keep longer if it has a high rye content. Wholemeal bread keeps the longest this way. You can also freeze your bread and rolls and bake them later so you can always enjoy fresh baked goods.

- Wheat bread keeps for up to two days.
- Mixed wheat bread lasts two to four days.
- Mixed rye bread lasts up to three days.
- Rye bread keeps for four to six days.
- Wholemeal and wholemeal bread lasts seven to nine days.
Use well-ventilated bread bins
You can easily store your baked goods for a short time at room temperature in the bags from the bakery or from the supermarket. Since the air cannot circulate there, however, mold can easily form. Well-ventilated bread containers, which are ideal for storing bread and rolls, are therefore better suited for storage. There are many different bread boxes to choose from. We recommend natural materials, such as ceramic or wooden bread bins, earthenware bread pans or fabric bread sacks.
Freeze bread in advance
If you eat fresh bread every day but don’t want to go to the bakery every day for it, you can simply freeze the freshly bought and sliced bread in portions at -18°C to -20°C. Estimate your daily bread consumption and pack the required number of slices in airtight, reusable freezer bags with zip closures.
As soon as you need new bread, take it out of the freezer and defrost it. The bread tastes best when you warm it up in the oven. Of course, you can also do this with fresh rolls. With this little trick you always have a supply of fresh bread at home. However, frozen buns and bread slices have a shelf life of 2 months and whole loaves of bread 4-6 months.
Types of defrosting bread
If you would like to buy in advance and then defrost your bread or rolls, it is important to pay attention to a few things when defrosting. There are several ways you can defrost your bread. Depending on what suits you and is practical for you, you will soon be able to enjoy fresh bread and fresh rolls at any time. However, to ensure that bread does not become too hard after defrosting or is still half-frozen on your plate, the following should be observed when defrosting.
Defrost bread in air
Not every roll lover bakes their bread or rolls in the oven or with a bread maker every day. If a nice crust is not important to you, you can simply let your bread thaw in the open air. Put it in your bread bin and wait until it is no longer frozen. This option is very suitable for individual slices, because a crispy bread crust is usually not so important. For a loaf of bread or rolls you have to plan a lot of time for air thawing.
Defrost bread overnight
The absolute best option is to take a piece of bread or rolls out of the freezer the night before and let them thaw overnight in a plastic bag or bread bin. In this way, the aroma is preserved and not too much moisture is lost. The next morning you can bake it in the toaster or oven if you like. For example, if you are planning a barbecue party in the evening, you simply take your bread out of the freezer in the morning.

Defrost bread quickly
It’s best to give your bread or rolls plenty of time to thaw, as this will preserve their flavor and won’t dry them out. A minimum is 1-2 hours at room temperature, preferably overnight. Unfortunately, all quick variants come with a loss of moisture, flavor and a nice crust. However, if it has to be, the microwave and toaster are the best choice.
Defrost bread in freezer bag
If it’s a few slices of bread, a flavor-retaining option is to let the bread thaw in the freezer bag. Place the closed bag in your bread bin and wait at least half an hour before processing your bread further. If necessary, lay out the individual discs separately if you are short on time. By the way, if you happen to have some bread left, you can use it to make wonderful breadcrumbs yourself.
