What actually is aquafaba?

Aquafaba is the liquid that forms when you cook chickpeas or beans. You may also know it as bean or chickpea water. In vegan cuisine, aquafaba acts as a substitute for egg whites or egg whites.

Important: Only use the cooking water from the chickpeas. The water from the soak contains large amounts of phytic acid and should therefore not be used for aquafaba.

Making aquafaba: Here’s how

You don’t need many ingredients to make aquafaba:

100ml chickpea water (after boiling or from the can)
1/2 tsp cream of tartar baking powder
1 pinch of salt
1/2 tsp locust bean gum

Now all you have to do is mix all the ingredients together and whip them up with the whisk or hand mixer. You can now use the foam that is created like egg whites. You can use the remaining chickpeas, for example to make hummus yourself.

Avoiding so-called FODMAPs can help against abdominal pain, flatulence and diarrhea. But what are these fodmaps anyway? And how does a (low) fodmap diet work?

First of all, the question of whether it means “Fodmaps” or “Foodmaps”: Fodmaps have nothing to do with the word “food” – FODMAP actually comes from English and is an abbreviation for fermentable oligo-, di- and monosaccharides and (English: and) polyols. But what is that exactly?

FODMAPs are fermentable polysaccharides

FODMAPs are dietary components that occur naturally in food or are added through food production. Today, the term stands for fermentable multiple sugars, double sugars (such as lactose), simple sugars (such as fructose) and sugar alcohols (sweeteners).

Fermentable means that the sugars can be fermented by intestinal bacteria: This can lead to bloating and flatulence. Important: Fodmaps are neither toxic nor dangerous, but they can be involved in digestive problems such as irritable bowel syndrome.

What do fodmaps do?

They have three things in common:

The absorption of the fodmaps in the small intestine is difficult or even impossible. Possible reasons for this are:
The molecules are too big and cannot fit through the intestinal wall.
The transport systems of the intestinal wall are not sufficient. This is the case, for example, with fructose.
The necessary digestive enzymes are not available – or not in sufficient quantities.
Fodmaps bind water: As a result, a lot of liquid collects in the intestine and the stool becomes softer or diarrhea occurs.
When Fodmaps enter the colon, they are fermented by the colon bacteria. Because they are short-chain, this process does not take much time and gas and flatulence develop after a short time.
These three characteristics mean that Fodmaps can cause some people to experience the symptoms of irritable bowel syndrome: abdominal pain, bloating or diarrhea. Anyone suffering from irritable bowel syndrome suffers chronically from these symptoms.

Low Fodmap Diet: How It Works

The (low) fodmap diet is a concept for the treatment of irritable bowel syndrome originally developed by Australian scientists, which you can read about here. Avoiding these substances improves the symptoms of irritable bowel syndrome.

In this diet, mainly foods that contain little of it are eaten. Fodmaps-rich foods, on the other hand, are avoided. One study showed that the diet significantly improved bloating, flatulence, stool consistency and abdominal pain in those affected by irritable bowel syndrome who took part in the study.

In the first phase of the (low) Fodmap diet, Fodmap-rich foods are completely avoided for six to eight weeks. If it becomes apparent during this time that the symptoms are significantly improving or normalizing, a long-term diet without these substances can make sense.

In the second phase of the diet, various Fodmap-rich foods are tested for their individual tolerability: a food rich in it is eaten in increasing amounts for three to four days to find out what amount is tolerated. A week later, the next food is tested. This systematic testing makes it possible to find out which Fodmap-containing foods trigger symptoms. These foods should be avoided in the future.

The goal of the diet is to find a diet that reduces symptoms and improves quality of life – without major dietary restrictions.

Who is the (low) fodmap diet suitable for?

This diet is particularly suitable for people who suffer from bloating, loose stools or diarrhea in combination with abdominal pain or cramps. This mostly affects patients with irritable bowel syndrome. Important: The (low) fodmap diet does not cure irritable bowel syndrome – it does help to avoid foods that cause stomach problems.

The (low) fodmap diet can also be helpful for people with fructose, lactose or sorbitol intolerance. The low-fodmap diet can also relieve abdominal pain and improve the consistency of the stool in patients with chronic inflammatory bowel diseases or celiac disease.

Fodmap list: Which foods contain fodmaps?

The (low) fodmap diet is not about eating entirely without: but the diet should be low in these substances. Unfortunately, you can neither taste nor see them. However, food can be classified according to the amount it contains.

However, the information is more of a rough guide: Anyone who eats a low-fodmap diet should test the individually tolerable amounts of appropriate foods (see the following lists).

For some people, making coffee is on their daily to-do list. Not every company can afford the “luxury” of excellent freshly ground whole bean coffee that can be easily prepared at the touch of a button.

Is making coffee an intern’s job?

Especially for meetings, a sufficient amount of coffee should ensure a high level of productivity and concentration for all participants. Yes, and very important – it must also be tasty. So where does coffee come from in many German companies and who has a license to produce coffee?

If you still remember the time of the intern, then this was clearly part of the daily tasks. The first coffee pot had to be ready at a quarter to eight (or whenever the boss came to work). A fresh carton of milk should have already been opened on the top shelf of the refrigerator, and the sugar bowl, sweetener dispenser and honey should have been filled accordingly. Of course, it has always been important to ensure that there are enough clean cups, saucers and teaspoons available. If you have a particularly important customer visit, you should take a French press and a milk frother and brew a creation that is special in terms of look and taste. Of course, with a thin layer of milk foam. That’s how it is when you’re an intern, sometimes you have to do things that aren’t part of the standard job description. Then fill everything with water. Satisfying different preferences and tastes was like a knowledge test that was given every morning.

However, in many cases there are no interns, so their place is too often taken by interns. After all, the years of apprenticeship are not the years of men. And it’s not too bad to sweeten your co-workers’ stressful day-to-day work by simply making delicious coffee drinks. However, often administrators, secretaries, or personal assistants must ensure that sufficient coffee is available. In some cases, it is not even regulated who is responsible for the supply of coffee.

What is an espresso maker?

The espresso maker is a small pot that is traditionally made of aluminum but is now increasingly made of stainless steel. With it, you can easily prepare fresh coffee on the kitchen stove or a hob. The most famous model was developed in 1945 by the Italian Alfonso Bialetti. A device for making coffee from France, which was already on the market in 1819, is considered to be the forerunner.

How is an espresso maker constructed?

A typical espresso maker consists of three parts:
The upper part is the collection container for the finished coffee. With the help of the integrated riser pipe, the coffee flows upwards. Below the riser is the first filter.
Below that is a funnel insert with a sieve, into which the ground coffee is placed.
The lower part is a kettle with a valve, into which water is filled.

How does an espresso maker work?

About the process of making coffee in the espresso maker: When the water is heated on the hob, the boiling water escapes through the metal tube and hits the ground powder. The coffee then flows through a fine sieve and rises in the tube to the upper part of the cooker. Here it is caught in a kind of jug. Admittedly, it sounds a bit complicated in theory, but in practice it’s incredibly easy. Done it once and you can hardly make mistakes afterwards.

Step 1: Fill with water

Unscrew the espresso pot and remove the funnel. Fill the kettle with preheated water. This step is intended to prevent the coffee from taking on the taste of aluminum or metal. Depending on how much coffee you want to drink, you should also choose the appropriate pot size. For a good result, the pot should always correspond to the amount to be prepared. That said, it doesn’t make sense to cook only two in a six-cup cooker. It is important during preparation that the safety valve is not covered with water.

Step 2: Fill in the ground coffee

Reinsert the funnel and fill it completely with ground coffee. It shouldn’t be squeezed. You will get the best results if you freshly grind the beans. Make sure that the grinding degree is set between fine and medium so that the coffee does not taste burnt or bitter later.

Step 3: Heat the espresso maker

Screw the top of the jug back onto the bottom. Then place the espresso maker on your hob and heat it up. Note that the stove should only be heated at medium heat. As soon as the water starts to boil, the top of the pot fills with the finished coffee. Don’t be surprised if you hear a “gurgling” or “whistling” sound coming from the device. Then you know that the coffee is being brewed. The noise is due to the pressure inside the cooker. The espresso is initially quite dark, but becomes lighter as the process progresses. You should remove the espresso maker from the stovetop as soon as steam comes out of the spout in the lid. From here the residual pressure in the pot is sufficient to complete the extraction. At this point, however, you can also cool the pot with a damp cloth and thus end the extraction.

Select coffee beans and degree of grinding

In general, you can use any coffee bean in an espresso maker. Depending on how strong you want your coffee to be or how much you want it to resemble an espresso, you should also choose the beans. For a full-bodied aroma, we would recommend a blend of Arabica and Robusta beans. These are also used to prepare a classic espresso and add a powerful flavor to your drink. For this, the beans get an extra espresso roast.

Your coffee from the espresso maker will be particularly good if you freshly grind the beans beforehand. The degree of grinding should be finer than for filter coffee preparation, but not as fine as for the portafilter machine. If you’re not quite sure, just give it a try:

If the coffee then tastes too watery, the grind was too coarse. If your drink is rather bitter or tastes almost burnt, the degree of grinding was probably too fine. During preparation, the funnel should be completely filled with ground coffee.

Which hotplates can I use with an espresso maker?

Basically, you can use an espresso maker on all hotplates, it depends on the material and the stove. Don’t be surprised if an espresso maker from the company’s stock doesn’t work in your kitchen: espresso pots made of aluminum cannot get hot on induction hobs. This is similar to old pots, which also do not work on induction stoves. You should therefore pay attention to the material your device is made of.

Good to know: In an emergency, the espresso maker can also work without electricity. You could even enjoy a delicious cup of coffee while camping with the help of a gas cooker. The practical coffee machine “To Go” can accompany you everywhere.

How to clean the espresso maker

In order for the espresso maker to have a long service life, it should be cleaned after each use:

After making coffee, let the device cool down first.
Then unscrew it.
It is best to clean the espresso maker by hand. Wash each part individually with lukewarm water without adding detergent until all residue is removed. For example, you could use a sponge to help.
Then dry the individual parts and reassemble the espresso maker.
There should also be a general cleaning every few weeks. To do this, first repeat the normal cleaning steps. Next, prepare a bowl of lukewarm water to which you add either citric acid, vinegar, salt, baking soda, or baking soda. It is also important not to use detergent or artificial cleaning agents. Place all parts (except for the rubber seal) in the prepared water for 15 minutes. This is how stubborn deposits and limescale are dissolved. Then wash everything under neutral water and dry thoroughly again. Finally, the espresso maker can be reassembled.

A cup of macchiato promises coffee enjoyment like in Bella Italia. But what is the difference between an espresso macchiato and a latte macchiato – and how can the specialties be perfectly prepared?

The fine difference between espresso macchiato and latte macchiato

Espresso macchiato and latte macchiato sound similar in name, but they are two different drinks. The espresso macchiato (also known as macchiato for short) is a genuine Italian specialty. With this type of coffee, the espresso is “stained” with milk (macchiato). It is characteristic of the drink that the barista only adds a little milk froth to the espresso.

The latte macchiato, on the other hand, consists of espresso and significantly more milk. Conversely, with this variant, the milk is “stained” by the espresso.

How do you make latte macchiato?

The perfect latte macchiato is served in a glass, because this is how the color nuances of the espresso and the milk can be seen. The hot drink consists of a total of three layers: the milk is at the bottom of the glass, then the espresso follows in the middle and the relatively firm and creamy milk foam is enthroned at the top.

How can the layers be separated? Quite simply: When pouring espresso and milk froth, caution and the right order is required.

First pour the milk into the glass.
Now add the milk froth.
Finally, carefully pour the espresso through the milk froth.

Prepare espresso macchiato: Here’s how

The preparation of an espresso macchiato does not require quite as much skill as the latte. To serve the perfect espresso macchiato, first froth the milk. Tip: The froth is particularly firm and retains its consistency longer if you use milk with a high fat content.

Prepare the espresso separately. First pour the espresso into the cup and garnish it with the milk froth.
The delicious hot drink is available in different versions:

● Italians like to drink a doppio macchiato, which consists of twice the amount of espresso. This variation is also often served in a glass. Incidentally, an espresso macchiato tastes particularly good when the cup is warm.
● Cold macchiato is a pleasure, especially on warm summer days. This is prepared without foam. Instead, the espresso is simply mixed with some cold milk and called espresso macchiato freddo.

A short coffee break in between refreshes tired employees and helps them get through a sometimes strenuous working day. Many employees also see a coffee machine in the office as appreciation of their work and are therefore happy to help themselves to the delicious hot drink. But can employees take a longer coffee break at any time?

Coffee regulations in the workplace

According to the Working Hours Act, everyone is entitled to a half-hour break if they work six to nine hours a day. Everything is allowed during this break: Surfing the web privately, chatting with colleagues and sitting comfortably in the office kitchen with a coffee. This is purely a rest period, which should also be used as such. And during the break time you can of course drink as much coffee as you like. However, you should be careful if drinking coffee extends to the time outside of the break, namely during working hours. Of course, there is nothing wrong with getting up briefly during work and taking a coffee to your desk. However, if you stay longer in the coffee kitchen and maybe start a private conversation with a colleague, things look different. In the legal sense, this is a break in which no work is performed. So anyone who inserts longer coffee breaks into their actual working hours runs the risk of a warning or even dismissal.

Drinking behavior in offices

After these somewhat dry facts, let’s move on to something more exciting: ideal drinking behavior.

General recommendation for your drinking habits

The human brain consists to a very large extent of water. Therefore, regular hydration is very important. The less we drink, the more we suffer from physical stress. But not only our brain, but also our other organs need liquid to be able to work properly.

A liquid intake of approx. 1.5 to 2 liters per day is recommended for ideal drinking behaviour. Depending on the weather and activity, you may need a little more. But be careful: not all liquids are the same. Water and unsweetened fruit and herbal teas are best. But vegetable and fruit juices can also be drunk without any problems. However, fruit juices are best enjoyed as a spritzer, as they contain a lot of sugar. Black tea and coffee are also allowed in the workplace in moderation. However, you should not go to the fully automatic coffee machine in the office more than four times a day. Lemonades and soft drinks as well as alcoholic beverages should not be included in the daily fluid intake.

If we drink enough liquid, our organs function properly. We are doing well and we can work with concentration.

What are the consequences of improper drinking behavior in the office?

Anyone who does not drink enough liquid quickly suffers from sometimes unpleasant symptoms that can only be alleviated by drinking enough liquid. Our body needs fluid to function properly. The following symptoms can occur with incorrect drinking behavior:

Headaches: Headaches are often one of the first symptoms
Lack of concentration: We are easily distracted and forgetful
Tiredness: We have the feeling that we are not really awake
Circulatory problems: we feel dizzy, it starts spinning
Dry skin, lips, tongue and throat: Our skin is constantly hydrated
If there is a deficiency, the skin and lips become dry, brittle and crack. It may take a few days for the skin and lips to recover. Our throat and tongue feel dry, making it difficult to swallow.

To put it simply, the low-carb diet is about consuming fewer carbohydrates, as these are considered “fatty foods”. Instead, protein meals are supposed to make the body believe it is hungry and force it to burn fat.

Depending on the low-carb nutrition plan, one to all meals a day should be prepared with as few carbohydrates as possible. As a result, the pounds should tumble. That doesn’t happen, because no diet can do it quickly and easily. Losing weight with low carb is very possible – but only if you change your diet in the long term and don’t shy away from more sport and exercise.

In the supermarket there is also a growing number of industrial foods and cookbooks, from low-carb bread to low-carb pasta and low-carb pizza, everything is there. Because you can make money with diets and corresponding products.

But is all this really necessary? So we took a closer look at the nutrition trend.

Low-carb diet: only for healthy people

Basically, all metabolic processes and quantity recommendations in this article refer to healthy people. For example, someone who already suffers from type II diabetes due to being overweight has a different metabolism and therefore needs different nutritional recommendations.

Low Carb: Diet without carbohydrates

Carbohydrates are basically a very good source of energy, which benefits our muscles and brain. If you eat the right carbohydrates in the right amount, you won’t get fat. Carbohydrates can keep you full for a long time and ensure, among other things, that the body forms the so-called happiness hormone serotonin.

If you always eat enough carbohydrates, you will also do something good for your soul: you will become more resistant to stress, keep your mood and have a lower risk of developing depression. Because: Perhaps you have already noticed that many people are in a bad mood during a diet and when losing weight, are more easily stressed and do not seem happy.

There are two different types of carbohydrates:

complex carbohydrates (bread, pasta, rice, potatoes, grain products, muesli …), i.e. starch products, and
simple carbs (fruit, candy, cookies…), meaning things with sugar
The body converts both types of carbohydrates into glucose, but at different rates. Complex carbohydrates are absorbed into the blood more slowly in the form of glucose than simple carbohydrates. Prerequisite for a long-term low-carb diet: at least one meal per day contains complex carbohydrates.

It’s not like complex carbohydrates are any better for losing weight. But the simple carbohydrates definitely carry the risk of weight gain.

Eating carbohydrates raises blood sugar levels, which leads to insulin release. Insulin is a metabolic hormone that ensures that the glucose from the meal is also transported into the cells and stored as glycogen. As long as this process is going on, the body can’t get to its fat deposits, and therefore your love handles can’t get to the collar either.

The consumption of carbohydrates is therefore unproblematic as long as you allow the body time between meals to burn up the nutrients transported into the cells. During this time, for example, you should not eat any more carbohydrates and also refrain from anything else that would raise the insulin level again, such as consuming high-calorie drinks or snacks.

Carbohydrates in themselves are neither unhealthy nor bad, but an important nutrient for muscles, brain and psyche! The clever low-carb diet is less about losing weight and more about not gaining weight through the wrong carbohydrates thanks to a sensible change in diet.

Is protein better than carbs for weight loss?

Of course, you also need protein, and every balanced meal includes a source of protein. Also read: Vegetable protein: These foods provide a lot of protein. The protein is broken down into amino acids in the body, which do not increase the blood sugar level and therefore do not initially lead to insulin release.

However, a few of these amino acids cause the body to start producing glycogen itself. What is intended as an “emergency program” in order to still have energy in times of hunger no longer makes sense in modern everyday life, but it nevertheless leads to an increase in blood sugar levels and thus to a release of insulin. However, this only happens after about six to eight hours.

A meal that contains no carbohydrates and consists only of protein only leads to an interruption in fat burning after many hours due to the delayed release of insulin. If you avoid carbohydrates, you can give your body at least six hours more time to burn fat. That’s why the low-carb diet is so often recommended for weight loss.

Does the low carb diet really work?

First of all: No “diet” works in the long term – unless you also follow this diet in the long term. A change in eating habits is therefore better than a short-term diet. And they can very well include aspects of a low-carb diet.

Ideally, with a low-carb diet, one or two of the three meals a day are prepared according to low-carb. If possible, such a meal contains a lot of protein, no carbohydrates and only a little high-quality vegetable fat in order to avoid an increase in insulin levels and the associated interruption in fat burning.

However, it is important not to eat or drink anything between meals, which increases the blood sugar level and thus leads to the release of insulin. Snacks, fruit, coffee with milk and other solid or liquid carbohydrates between meals are completely taboo.

The low-carb diet allows snacks, but these are generally not recommended because they train the wrong eating habits with snacks between meals.

Because protein also leads to a (delayed) insulin release, it makes sense to fill the time of this insulin release with a carbohydrate-rich meal in order to make at least a minimum of it available to the muscles, brain and psyche. A balanced, mixed-food meal with at least 50 percent complex carbohydrates (preferably whole grain) is advisable here.
