Various mixtures of vegetables, meats and legumes on a tortilla are very common in Mexico. Bean tortilla is convenient and tasty, and you can also take it with you for lunch.

  1. Cut the pork fillet into 1 cm cubes. Chop the garlic. Onion cut into strips. Cut avocado into cubes.
  2. Turn on the oven to preheat to 200 degrees.
  3. Grease tortillas, 16 cm in diameter, with vegetable oil on all sides. Put on a baking sheet and place in a preheated oven for 5 minutes (bring to a crispy state), turning once. Take the tortillas out of the oven.
  4. Grease a large skillet with vegetable oil, heat over medium-high heat, add meat, fry, stirring occasionally, until pink, about 5 minutes. Transfer the meat to a plate, cover to keep warm.
  5. In the same pan in which the meat was fried, put the garlic, fry for about 30 seconds, then add the chopped tomatoes, reduce the heat, simmer, stirring, for about 5 minutes. Mash the tomatoes with a spoon. Add the washed beans, chili powder, herbs and salt to the pan with the tomatoes, heat well for a couple of minutes.
  6. On the toasted tortillas, put the bean appetizer, meat, cheese, onion and avocado. Serve the tortilla with beans, meat and vegetables immediately.
