Vegetable stew with minced meat is an appetizing dish with a rich taste. A large assortment of vegetables (potatoes, young cabbage, zucchini, onions and carrots) creates a bright flavor palette. Garlic, Italian herbs and dill give the dish a delicious flavor. And thanks to the addition of minced meat, this stew turns out to be satisfying.

  1. Essential products. I have minced turkey, you can use any minced meat you like.
  2. You will also need 400 ml of hot water for cooking.
  3. Peel and wash onions and carrots. Cut the onion into half rings, rub the carrots on a coarse grater.
  4. Heat the oil in a large skillet (or thick-walled saucepan). Put onions and carrots in a pan and fry over medium heat until soft and golden brown, 5-7 minutes.
  5. Add minced meat to the pan to the vegetables.
  6. Fry the minced meat together with onions and carrots, stirring and breaking the lumps, for another 5-7 minutes.
  7. Peel the potatoes, rinse, cut into medium cubes and put in the pan. (I have a peeled potato weight of 350 grams.)
  8. Mix everything and fry with potatoes for 3-5 minutes.
  9. Shred cabbage. We put it in a frying pan.
  10. Fry everything together for 3-5 minutes so that the cabbage "sags".
  11. Pour 400 ml of hot water into the pan.
  12. Simmer everything over low heat, covered for 7-10 minutes.
  13. We wash the zucchini, cut off the ends. If the zucchini is young, you do not need to peel the skin. Cut the zucchini into medium cubes and put in the pan
  14. Dilute tomato paste in 100 ml of water.
  15. Pour the tomato mixture into the pan. Mix gently.
  16. Cover the pan with a lid and simmer over low heat for 15 minutes, until all components are fully cooked. Then add 1 teaspoon of sugar.
  17. We also add Italian herbs and salt.
  18. Peel the garlic and pass it through a press into the pan.
  19. Simmer for another 3-4 minutes.
  20. We wash the dill, chop finely. Add to the pan.
  21. Mix everything and after a minute turn off the heat.
  22. A hearty and delicious dinner for the whole family - a stew with zucchini, potatoes, young cabbage and minced meat - is ready!
