In a medium bowl, lightly beat eggs with water, add bacon, scallions and 1/8 teaspoon salt.
Spray a large skillet with vegetable oil and heat over medium heat. Pour beaten eggs into a preheated pan and cook, without interfering, until the eggs set. Using a spatula, gently turn the eggs over (in small portions), cook for a couple more minutes. Remove the skillet from the stove.
Lay the fried eggs on the pita, sprinkle with cheese and lay out the avocado slices. If desired, drizzle the omelette appetizer with a few drops of hot sauce. Serve the pitas with the omelet appetizer immediately.
