Arancini with mozzarella

Today's recipe is from Sicilian cuisine. Arancini are fried rice balls, breaded. Arancini is usually made with meat filling, but in this recipe - with mozzarella cheese. Served with arabiata sauce. This is a very tasty and easy to prepare dish.

  1. Rinse the rice well in cold water, put it in a colander and let the water drain. Heat the olive oil in a saucepan, put the rice in a saucepan and fry the rice for 3 minutes, stirring constantly.
  2. Add 2 cups of boiling water to the pot with rice and immediately reduce the heat as much as possible. Close the lid and cook the rice for 15 minutes without stirring. When pouring boiling water, be careful - the water will begin to splash and boil violently.
  3. Grind white bread into small crumbs. Easy to use blender.
  4. Pour salt and pepper into the cooled rice, add 1 egg, mix everything. Add prepared bread crumbs, chopped herbs and grated cheese. We mix everything well.
  5. Mozzarella cut into small pieces, the size of a large cherry.
  6. We form a dense ball the size of a golf ball from the rice mass. To prevent rice from sticking to your hands, moisten your hands with water.
  7. In the center of the ball, make a recess with your finger, put a piece of mozzarella in it and close it with rice so that the mozzarella remains in the middle.
  8. Roll the ball in the palms to the correct shape.
  9. Prepare the lezon: beat 2 eggs until foamy and add a little salt.
  10. Dip each ball of arancini thoroughly on all sides in the lezon.
  11. Then roll in breadcrumbs.
  12. Pour the required amount of vegetable oil into the pan so that it completely covers the arancini when frying. Heat up the oil to a high temperature. To check the readiness of the oil, you can throw a small piece of bread into it: if the oil starts to boil, it means it has warmed up.
  13. Carefully drop a few rice balls into the hot oil and fry the arancini until golden brown, about 3-4 minutes, turning occasionally.
  14. Remove the fried arancini from the oil and place on a paper towel to soak up the excess oil.
  15. Serve hot arancini with arabiata sauce.
