Beef croquettes with cheese and lemon zest

Italian croquettes (mondechili) will surprise anyone!

Ingredients

Directions

  1. Prepare the necessary ingredients.
  2. Wash the beef.
  3. Cut the crusts off the bread.
  4. Rinse and pat dry the parsley.
  5. Transfer the beef pulp to the pan, pour in water and put on a strong fire.
  6. When the water boils, reduce the heat and cook the beef until tender (40-60 minutes, depending on the meat itself). Don't salt the water.
  7. After the time has elapsed, remove the boiled meat from the broth and let it cool.
  8. Divide the bread into small slices and fill with milk.
  9. Pass boiled beef and soaked bread through a meat grinder, having previously squeezed it out of milk.
  10. Grate Parmesan on a fine grater. Remove the zest from the lemon using a fine grater (only the yellow part). Finely chop the parsley.
  11. Add the egg, lemon zest, parmesan and parsley to the minced meat.
  12. Add salt, ground pepper and nutmeg.
  13. Thoroughly mix the minced meat until smooth.
  14. With wet hands, shape the minced meat into walnut-sized balls.
  15. Roll the croquettes in breadcrumbs.
  16. Melt the butter in a frying pan and lay out the croquettes.
  17. Fry the croquettes over high heat until golden brown on all sides, about 7 to 8 minutes.
  18. Beef croquettes with cheese and lemon zest are ready.
  19. Serve croquettes hot, with any side dish (ideally spaghetti).
