Meat rolls with olives and sweet peppers are a hearty dish that is simply doomed to success. Rolls of beaten and marinated pieces of beef, stuffed with sweet peppers and olives, are fried until golden brown, and then baked in tomato sauce. Thanks to the marinade with the addition of lemon juice, Provence herbs, garlic and paprika, the meat is very tender and spicy.

  1. Prepare the necessary products.
  2. Rinse beef and pat dry with paper towels. Cut the meat into 6 portions, as for chops.
  3. In the process of cooking, you will need cling film and toothpicks.
  4. It is good to beat each piece of meat with a kitchen hammer on both sides, covering with cling film so as not to damage the fibers.
  5. Put the meat in a bowl. Squeeze out the juice of half a lemon.
  6. Pour into the meat 2 tbsp. tablespoons of olive oil.
  7. Add Provencal herbs, basil, sweet and smoked paprika. Peel the garlic, pass through a press and add to the meat.
  8. Mix the meat well. Cover the bowl with a lid or cling film and refrigerate for 1-2 hours.
  9. Rinse the bell pepper, free from seeds and cut into strips.
  10. Put three olives and two strips of bell pepper on the edge of each piece of meat.
  11. Roll up the beef and secure with a toothpick.
  12. Do this with the remaining pieces of meat, olives and chopped peppers.
  13. Turn on the oven to preheat to 180 degrees.
  14. In a frying pan heated with the remaining oil, fry the rolls for a few minutes on each side, until golden brown.
  15. Rinse the sweet yellow pepper, free from seeds and cut into small cubes. Cut the remaining red pepper in the same way.
  16. Prepare the sauce. To do this, combine water with tomato paste and mix. Pour the sauce into a baking dish and add the chopped peppers.
  17. Remove skewers from rolls. Put the rolls in a baking dish, immersing in the prepared sauce, and send to preheated to 180 degrees for 35 minutes. Drizzle the meat 2-3 times during the roasting process.
  18. Beef rolls, with olives and sweet peppers, baked in tomato sauce, are ready.
  19. Serve the rolls hot, with the sauce in which they were baked.
