  2. Puree the raspberries with a blender.
  3. Put the raspberry puree on the fire and cook for 2 minutes after boiling. At the end, add agar-agar.
  4. Rub the raspberry sauce through a sieve.
  5. Now you can proceed to the preparation of cheese croquettes.
  6. Divide the eggs into whites and yolks. Send the yolks to the refrigerator, they will not be needed.
  7. Beat egg whites with salt until stiff.
  8. Sift flour with baking powder into a bowl with whipped proteins.
  9. Mix.
  10. Cheese grate on a fine grater.
  11. Add cheese to dough. Knead for a couple of minutes until smooth.
  12. Roll the dough into walnut-sized balls.
  13. I got 16 pieces.
  14. Roll cheese balls in breadcrumbs.
  15. Heat vegetable oil well in a small saucepan. Gently place half of the cheese balls into the boiling oil (so that they float freely in the oil) and fry for 30-40 seconds.
  16. Put the finished cheese croquettes with a slotted spoon on a plate with paper napkins.
  17. Serve croquettes hot with raspberry sauce.
