Cupcakes on kefir, with plums

I suggest you cook very tasty and tender muffins with plums. We will make the dough based on kefir and butter, and plums will be in the filling and on top of the cupcakes. These cupcakes, in addition to excellent taste, are very beautiful.

  1. Prepare products.
  2. If desired, kefir can be replaced with liquid yogurt.
  3. Remove the butter from the refrigerator in advance - it should become soft.
  4. From the specified amount of products, exactly 12 cupcakes are obtained.
  5. Turn on the oven to preheat to 180 degrees.
  6. Put the softened butter into a bowl.
  7. Add sugar and a pinch of salt.
  8. Mix butter and sugar well.
  9. Crack an egg.
  10. Then pour in kefir.
  11. Mix all ingredients with a mixer or whisk until smooth.
  12. Separately mix flour with baking powder and sift through a sieve.
  13. In portions, add flour to the liquid part.
  14. Knead the dough, you can use a mixer. The dough will be thick.
  15. Wash the plums, set aside 6 pieces. Free the rest of the plums from the pits and cut into arbitrary small pieces.
  16. Add sugar (1 tablespoon) and cinnamon to the plums. Mix.
  17. Add plums to the batter.
  18. Mix well.
  19. Bake the first batch of cupcakes (I only have 6 cupcake pans, so I bake in two batches).
  20. Cut three plums in half, free from stones. On each half of the plum, make shallow parallel cuts.
  21. You can grease a cupcake mold with oil (or use silicone molds). Divide the dough into molds.
  22. Lay the plum halves on top of the dough.
  23. Bake cupcakes in an oven preheated to 180 degrees for 30-35 minutes (be guided by your oven).
  24. Then make the second batch of cupcakes in the same way.
  25. Sprinkle finished cupcakes with icing sugar and decorate with mint leaves.
  26. You can serve such homemade cakes to the table with milk, tea or your family's favorite drink.
