The Indian word "paneer" refers to homemade cheese, or rather, pressed fresh cheese, which is cut into pieces, fried and often used as an ingredient in a dish. The curry is made with a classic array of spices, including the obligatory turmeric, as well as an Indian garam masala spice blend.

  1. Heat half the oil in a large wide skillet. Fry the cheese pieces on all sides over medium-high heat for 5-8 minutes until golden brown (turn often to prevent the cheese from burning). Remove with a slotted spoon from the pan.
  2. Add to skillet and heat remaining oil. Add ginger, chili, curry leaves, cumin, garam masala and turmeric. Mix well, add bell pepper and cook over low heat for 10 minutes.
  3. Add tomatoes and cook for 10 more minutes. Put the fried cheese in the pan, salt and pepper to taste. Simmer over low heat for 10-15 minutes. Stir in cilantro and serve curry with rice or Indian flatbread. Bon appetit!
