Deep-fried mackerel

Mackerel fillet is fried in small pieces in oil. It is good to serve such crispy pieces of fish as an appetizer.

  1. Remove all bones from the fillet. Cut the fillet into small pieces.
  2. In a small bowl, combine soy sauce, sake, sugar, garlic, ginger, and mint (if using). Put the pieces of fish in this marinade, leave to marinate for 20 minutes.
  3. Remove the fillets from the marinade, dry on a paper towel, and then roll the pieces of fish in starch.
  4. In a wok or other deep frying pan, heat a large amount of vegetable oil to a temperature of 180 degrees. Put a few pieces of fish in hot oil, fry until golden brown. Transfer the fried fish to a paper towel. Fry all the fillets in small portions.
  5. Serve fried mackerel fillet with lime wedges.
