Eggplant baked with ham and cheese

We will bake them in the oven. The result will be very tasty: tender eggplants, between them - fragrant ham and melted cheese, and on top - a golden crust.

  1. Wash the eggplant, pat dry and cut off the edges on both sides. If the eggplant skin is tender, then it is not necessary to peel it. Cut the eggplant into slices about 1.5-2 cm wide. There should be an even number of them (I got 16 circles).
  2. Cut the ham into small pieces, half as many as the eggplant slices. Cut hard cheese in the same way.
  3. Crack the eggs into a bowl and add a pinch of salt.
  4. Whisk the eggs with a fork or whisk.
  5. Arrange the eggplant slices on a cutting board, top with the ham. Sprinkle with a little dried basil (or put on a basil leaf) and a pinch of salt.
  6. Put a piece of cheese on top of the ham and basil.
  7. Cover the cheese with the remaining eggplant slices.
  8. Roll the resulting "sandwich" in flour.
  9. Then dip into the egg mixture.
  10. And roll it well in breadcrumbs. Do the same with the remaining "sandwiches".
  11. Grease a baking sheet with vegetable oil and cover with parchment.
  12. Transfer the eggplants with the filling to a baking sheet and send to the oven preheated to 180 degrees for 25-30 minutes.
  13. These are delicious eggplant baked with ham and cheese, I got it. They can be served with fresh tomatoes, cucumbers or herbs.
